Default Green Chile Cheese Spread

This is higher carb than I can eat as much as I'd like regularly, but there may be some of you who can enjoy it, so here it is, for those of you who can fit it into your regimen.

1 8-oz pkg cream cheese, softened
8 oz sharp cheddar cheese spread (like Kaukauna)
1/8 tsp. garlic powder
1 tsp. grated onion
3 - 4 oz green chiles
2 oz pimentos
1/2 cup chopped pecans

Blend cream cheese & cheddar spread until smooth. Add remaining ingredients & mix well. Chill before serving.

serving size: 2 ounces

calories from fat: 94
total fat: 11g
saturated fat: 5g
trans fat: 0g
cholesterol: 26mg
sodium: 165mg
total carbs: 3g
dietary fiber: 1g
sugars: 2g
protein: 4g
vitamin A: 8%
vitamin C: 9%
calcium: 9%
iron: 2%

I'm tempted to try this with some real sharp cheddar and maybe some butter or more cream cheese if it needs it to be spreadable. Maybe that would lower the carb count? It sounds really good, Shanny!

Sound great, Shanny. I think if you spread it on a LC cracker or cucumber it wouldn't overwhelm my carb count. My problem with things like this is I want to eat way too many.

How about loading it up with jalepenos or maybe a Habenero

You could drop the pecans and lower the carb count - I'm guessing it wouldn't make too much difference to the flavor. Not knowing what's in cheese spread, I too would use real cheddar.

The cheese crock mixture would be a good one to swap in for the commerical cheese spread. I think I'm going to make up the green chile spread using grated cheddar instead of the boughten tub of spread, and then tinker with the remaining cheese crock ingredients along with the green chile/pimento/onion.

Let me know how your tinkering goes . I am going to make a double batch and do half with pecans the other without. The other diabetic at work is allergic to tree nuts. Carry in is Monday.

I grated a cupful of sharp cheddar to start. Then added . . .
2-3 tbsp. sour cream
splash of worcestershire sauce
dash of garlic salt
splash of dry sherry
heavy cream as needed for desired consistency

Ran this all through the food processor until smooth.

Both of us enjoyed it by itself on WASA and pork rinds. Next I'll do a batch just like it & use it in the green chile spread. I think it'll be fine.
