When testing some foods I find testing at 3 hrs. necessary. (e.g. I recently tested a low carb pasta) If my BS on the first test is higher than my pre-meal test and then if my 2nd hr. test is still higher than both prior tests, then I fear I have not yet reached a peak reading. Therefore a 4th test is necessary at 3hr. following the first bite! ...hopefully you will then see your BS start down! By the way the "low Carb' pasta failed on the forth reading....and I tested it on two different days....
