When I buy real peanut butter (crunchy!) I store it in the fridge upside-down for a day or so and then stir it up... stays emulsified at least until the jar is emptied.

More detail on the mouse's diet...

Regarding the dietary breakdowns I think it important to be clear when referring to the percentage of energy from each macronutrient, that these diets were not isocaloric: with the standard diet at 4.07 kcal/gm and the high-fat at 5.56 kcal/gm

The fats in both cases are mostly Hydrogenated Coconut Oil

Dang, now isn't that the tip of the week. I got so tired of trying to mix it that I took to scooping out all the PB (and yes, crunchy!) into a bowl, mixing, and putting back in the jar. Pain in the patootie.
