Default Baked Fried Chicken

I hate one drumstick last night that I baked in shake in bake. My glucose level was 378. The only other thing I ate was breakfast. I had a scrambler/bacon from Krystals. I was helping my daughter with her homework and she said ma you have dark rings around both your eyes right now ma. I was so tired. I hope it was just being tired and nothing to do with my diabetes or high blood pressure. What do you think?

without shake & bake you could have eaten more chicken

I don't have one thing in my pantry that is flour/wheat.

The lack of food, being tired, and then eating a piece of shake-n-bake chicken may have been the tipping point. When you exhaust yourself and skip eating your liver will over compensate with lots of glucose. Most people with T2 have a bad governor system on the glucose excretion from the liver. It doesn't know when to quit. Grab some nuts, cheese, etc during the day, even if you are not hungry. You have to convince your brain you're in control of your liver and the only way to do that is by eating at regular intervals.

Next batch of Shake-n-Bake, try the Bob's Red Mill Low carb baking mix, works well for fried chicken with a whole lot less carbs. Your daughter will love it as well.

The commercial Shake & Bake breading mixes contain not only wheat flours, but sugar, maltodextrin, brown sugar & other carby flavorings. One serving (about 1 oz) is listed as having 22g carbs . . . not a good choice for diabetics.

Shanny do you remember when crushed Corn Flakes were the big rage for oven baked chicken.

My doctor told me during my last visit when I went to get my blood work that my liver readings were a little off. She said it was nothing to worry about at this point but she would recheck my blood work in a month. I wonder do that have anything to do with it.

You more than likely had the beginnings of NAFLD, Non Alcoholic Fatty Liver Disease. Meaning your liver was storing way more engery than it needed to. Low carb diet corrected this same problem for me.

Brand, the Shake-N-Bake, although very tasty, is certainly not something a diabetic should be eating. Try using some Matzo meal? (it comes in a container like corn meal). The Matzo does not raise my bg's like flour or other wheat flour items will. Also, did you fry that chicken in a good oil, like coconut or olive oil? You must watch every item you use and put in your system. I know it sucks and it is alot of work, but it will become second nature for you after you incorporate these items in your diet.
As far as the liver is concerned; I too have a fatty liver. Unfortunately it is an effect from diabetes being out of control. It can however be corrected. I take Milk Thistle to help keep my liver healthy, and the fish oil supplements should certainly help with it as well. I actually participated in a study for the correlation between metabolic syndrome and fatty liver disease. And yes, my liver came out fatty. But, I am hoping that all that I am doing will help cancel that effect. Two more weeks until next blood work. Very anxious.
Look up the recipes in the Diet and Nutrition portion of this forum. Many great recipes there that taste very good and will not harm your diabetes.
Good Luck. Oh also, MCS is right...you must eat throughout the day. Skipping meals or a snack is just horrible for a diabetic. That is probably the one good thing about diabetes; you have an excuse to put good foods in your mouth!
