@Sholleman another thing that has worked for me, when I don't feel like cooking (or even eating) is to make a protein shake in my blender.

The options are really unlimited, based on your own preferences.

I usually start with 2 cup of unsweetened coconut milk. (If you're having trouble keeping weight on you might add some heavy cream in there too and maybe even some coconut oil.) Then I add some low carb chocolate flavored protein powder. (I use Body Fortress Super Advanced 100% Protein Isolate that I pick up at Walmart 2 net carbs) After that it is up to you what you want to add in there. Some folks add a couple of tablespoons of peanut butter or maybe some spinach. I love adding a little instant coffee to mine. The possibilities are nearly endless, but always test to see how it works for you!

Those look GREAT!....my problem is still that I am too ill to cook. I'll look at them and see if any are EASY...and, when I mean easy, ...well, it's hard to explain. Even after that, when night came and I wanted to make it, it was like looking at climbing a mountain when it came to chopping everything... so, everything I do is a struggle of monumental proportions. that's one of the things making this so hard. I need a cook!

Chronic Fatigue Syndrome can be very challenging to deal with. Although I do not suffer from that illness, I am often so limited on time that I need things to be VERY QUICK and EASY or I end up not eating at all. Maybe we can all brainstorm for some ideas.

By the way, I buy my eggs already boiled and peeled for me at Costco. Initially I was doubtful they would taste good, but they are actually amazing!

Figuring out what to eat when I'm not at home. Sometimes my choice is whatever is in walking distance (hospital) and I have to choose between the lesser of 8 evils because I can't live off of coffee. I kid you not, 2 weeks ago, the best choice I had was vanilla ice cream because it was the only thing I could eat without Novolog (which was at home - this was a 1/2 hour appointment that turned into 3-4 hours).

I'm wondering if you could buy a sandwich, and just eat the innards ?

(If I weren't gluten intolerant and would react to the bread having touched the filling, it would open up a world of possibilities for me.)

I could try a bunless burger next time. Hadn't even thought of that. For you, I know at Superamerica, you can buy boiled eggs in the fridge case, and at Wendy's, they have chili that is also gluten free. At a hospital food cafeteria, pretty much only boiled eggs IF they even have them!
