I want Carbs!
 
Sigh...I SO want to eat a real sandwich right now!

I miss eating breakfast tacos and the yummy southwest chicken biscuit with hash browns from McD's. I miss eating a baked potato for dinner.

I hate diabetes. Someone slap me back into reality :vs_frown:.

How about this?

I posted it in a ketogenic forum as a reply to a post similar to yours.

I miss bread, all kinds of bread. I loved it so much I used to bake it. Artisan breads were my specialty, I'd use all different kinds of flours, nuts, seeds, jalapenos, sun dried tomatoes, even cheese bits in the dough.

I miss pasta, as I was the biggest eater of all kinds. My favorite sauce was Puttenesca and I'd make my own. I could eat 3 large plate fulls with fresh made garlic bread. I've even eat spaghetti with melted butter and different types of goat and sheep cheeses. I couldn't get enough if it.

I miss rice, Basmati rice specifically. I'd make up all kinds of Indian dishes and cook up 6 servings of rice just for my wife and I as I could eat 4 myself. Sometimes I just eat a couple of servings of plain rice, very filling, very bloating.

I miss candy, especially the Hershey's mini chocolate bars. My wife would buy me a couple of packs a week and I could eat an entire pack in one sitting.

I miss crackers, all kinds. I loved Club, Ritz, and Saltines. I could eat a 1/4 box, a single wrapped pack in one sitting with a block of white cheddar and a slicer. Crackers are the best. I loved Cheeze Nips too and could eat an entire box in one sitting.

I miss Granola and Grape Nuts. I could eat 3 bowls as a late night snack with 1% low fat milk. This often happened when just 3 1/2 hours prior I had 2-3 plates of spaghetti and garlic bread.

I miss beer. I used to drink beer every night. I loved the rich yeasty malty micro brews. The ones with the funny names and colorful packs. They were all shades or amber, orange, brown to almost black. I loved the ones most that I could eat with a spoon;-)

I miss Mexican, it was one of my favorite foods, along with East Indian, Thai, Chinese. Chili Verde was my favorite dish with lots of fresh tortillas. I loved the rice and beans too and all the cheese with fried jalapenos. and strawberry or lime frozen Margs.

I really miss pizza. I'd often get the basic take and bake and play with them creating wonderful pizza masterpieces that were delectable with beers.

But none of it tastes as good as skinny feels and having a normal A1c. I've not had any of the above in going on 4 years. I can easily go without any of it forever!

Would you be willing to give up your toes, a foot, a leg, a kidney, your eyesight, any of those things ...... for carbs?

I know how you feel. Making a drastic change takes some time to get used to. Like any loss, there's a grieving process to go through.

It has helped me to find low-carb alternatives to the carby foods I liked. Over time these became the favorite foods. Eating certain foods is an emotional experience for many, which makes the transition more difficult.

Hang in there - you'll make it.

Sometimes I am pretty sure I am addicted to carbs!

I have found workarounds that help take care of the cravings though.

Breakfast tacos are amazing wrapped in huge lettuce leaves, but if that won't do the trick for you, there are some low carb tortilla options in most grocery stores now. Look for Mission Carb Balance.

Check Google or Pinterest for low carb biscuit recipes. Lot's have LCHF people are coming up with some amazing recipes.

The same for potatoes. Start experimenting with cauliflower. You will be blown away by some of the recipes, but keep a close eye on the ingredients. As an example, in this one it calls for bread crumbs, instead, try crushed pork rinds or coconut flour.

There really are some amazing alternatives out there.

I did say "slap me back into reality," and you did! I am NOT willing to give up my eyesight, limbs, not even my ugly little toe, to this disease! I saw my Dad go through these horrible complications.

I did try the Cauli fried rice. It was delicious. I've made it twice already.

The longer you go, the easier it gets. For me, I've had to go keto and keep carbs very low all the time. I recently had to give up almonds as a few, 5-6 would trigger an insulin response and raise BG, extreme hunger and cravings would soon follow. I won't eat fake sweeteners either for the same reason. The highest carb food I'll usually eat is 1/4 a tomato. GL!
