Now that I've learned to "eat to the meter," it can be fun and scary at the same time.

The other day, I was craving KFC, so I decided to get the chicken breast with green beans. I pulled off the skin and threw the biscuit and cookie away .

OMG...my BG was 153 ! Thankfully, it came down to 126 when I checked 2 hrs later.

Ok, so slapping my hand, I'll never eat KFC again .

this is very confusing ...

you can have the Kentucky grilled chicken with 0 carbs and shouldnt spike you at all

I would try the grilled chicken and if you are still having spikes, then you have to 86 it...

Give the grilled a shot

What your blood glucose spikes to after eating something also depends on where you start from. Let's say the KFC spikes you 30 points. Sounds right. If you started at 93mg/dL...you would spike to 123mg/dL. If you started out at 123mg/dL...you would spike to 153mg/dL.

When "eating to your meter"...testing an hour later will tell you how that food is affecting your BG. Unless you know where you started from...you can't really tell how much that is.

If you're goal is to try and never go over 140mg/dL...then it's all really just math. Sometimes you can eat KFC...sometimes you can't.
