Default Coffee and blood glucose

The last few days my BG has been really good, very steady. I've never had it be steady like this, I've gotten it lower since switching to a LCHF diet. I'd love for it to stay like this. So I started to think about what I've done that is different. Only two things come to mind, one is that I've only been eating two meals and a snack if needed. Mostly skipping lunch, but one day skipped breakfast and had lunch instead. The other thing is I've been drinking coffee, one or two cups a day. I like coffee but I never really drank it daily. Both these things have happened at the same time so I'm not sure if it's one or the other. I was wondering what affect coffee has on everyone's BG?

Type 1 diabetic with a list of other problems. Migraines, extreme anxiety, fibromyalgia, osteoarthritis, back pain and pains that pop up and go away at random. Many of these issues I've had since I was young.
Boyfriend with his own health issues, the biggest being Crohn's disease and pain from a broken back when he was in his early 20's.

Coffee seems to raise my BG, I have tried decafe, black, with coconut milk, with almond milk, with heavy cream and with 1/2 and 1/2. If I drink it 3 days in a row my BG goes up. I'm thinking about trying Chickory. My husband says it the stress the joy of getting a cup of coffee causes. Lol

I guess I've been doing a version of bullet proof coffee. Coffe, a bit of cream, a very small amount of butter, sweetener, almond milk plus whatever I feel like adding to it. Could be spices, vanilla, other flavors. I whip it up in a nutri bullet. It taste so much better to me in the nutri bullet, even if I add all the same things to it normally. I only do a small amount of butter because I like the taste but don't need the extra calories. I do the same for my boyfriend but load it up with butter, coconut oil and some protein powder, he can use the extra calories.

Is the coconut milk / almond milk unsweetened?

Yep, unsweetened and only 1 carb pre cup. I only use 1/4 of a cup. And bullet proof coffee does the same after a couple mornings. I love coffee so much, and keep retrying it a different way. Or more like I can only give it up for a week at best.

I drink three large cups of coffee every morning. I use a bit of artificial sweetener and a large shot of HWC....Yummy! It has no effect on my BS....

Like most say, we all are different...maybe switch to tea!
