From what I read, organ damage from BG occurs at BG of 140 and over. I believe I could eat several chocolate chip cookies each day, a bite here and a bite there, i.e. very small portions, and never spike my BG over 140, or even 120, yet I would probably end up with a much higher A1c than Dr. Bernstein would approve of.
My question (maybe a stupid one) is, would I be damaging my health by eating like this?

Why would your A1c be higher if you can eat a cookie and not have a spike?

Your HbA1c maps very roughly to your average blood sugar over the llifetime of your red blood cells (in theory 3 months.) An HbA1c of 5.7% maps roughly to an average of 117 mg/dL.

To achieve a sub 5% A1c, you are targeting your average at below 95 mg/dL. I'm not convinced that cookies, even in small portions will help you achieve that.

You believe that you could do so? Or do you have evidence in terms of test results showing virtually no spike?

Do you intend to eat anything else besides cookies? And you got this idea from your diet guru, Dr. Bernstein? I thought you had embraced his ideas and nowhere do I see him recommending chocolate chip cookies.

Well ... I used to believe that. Hey, my doc said I could! So, I tried it. (Apples and toast, rather than cookies. Still ... carbs.)

Big Shock: I spiked to the skies!

Turns out that carb effects accumulate ... and over a 24-hour period or shorter, several nibbles are the same as 1 big gulp. The effects of a carb binge can last from 48 hours to 1 week.

I've personally never experienced carb effect lasting long. I'm able to eat carbs and if I see a spike it's usually back down quickly and never seems to effect the next days numbers. That's just me though.

Yes, but if I'm not mistaken, you've posted many times in various threads about how you can eat high carb foods and meals (pizza, pasta, etc.) and react as a non-diabetic would. There's a big difference there. I don't actually know any diabetic that can eat pasta or some of the other foods you are able to, and control blood sugar or spikes with minimal effort. Just sayin -

There's a big difference there. I don't actually know any diabetic that can eat pasta or some of the other foods you are able to, and control blood sugar or spikes with minimal effort. Just sayin -
I'm not saying every one can. As I said I'm able to. Maybe there are others. Everyone's body is different.

Volfan? I think it's time you started testing after you eat all these carbs - at one hour, mind you - and sharing those numbers with us. You are disrupting this forum with your taunts about all the carbs you eat, and we have the scientific knowledge that carbs raise blood sugar without fail. You are not so individual as to be able to sidestep this basic biological finding.

So either 'fess up, or shut up.

When did I say I didn't test at the one hour mark? My one hour marks typically are better which someone on this site said it means my fast acting insulin still works?

I am just sharing what my meter is telling me. I have been testing at one hour and two and three and four and five if I eat something that I know has more carbs. The last time I ate two slices of pizza with 82g of carbs I tested ever hour for the rest of the day. I believe twelve times that day. The highest reading was 142 I captured. Now maybe I spiked to 300 but it obviously was down within a hour.

I'm not saying I'm sidestepping something as you stated. I posted before that maybe I'm not diabetic and got people telling me that a A1c of 7.7 and 6.2 means something. And since there's no cure than what am I? I'm just trying to say not everyone is the same. I'm also saying that I do eat better but loosing weight seems like the main factor that has fixed me and my doctor agrees.

If people don't have a open mind that this disease can be reversed then maybe I'm wasting my time on this forum?

Good responses.
I tried the "am I diabetic" test on "blood sugar 101", i.e. be fasting and eat a bagel containing 60 to 70 g carbs and test at one and two hours. 181 at 1 hour, 137 at 2 hour.
I ate 1/2 of a fairly large chocolate cookie today and got 137 at 45 min and 117 at an hour and 15 min. So you're correct I can't do either of those things if I want a 5.0% A1c.
I'm working pretty conscientiously on a LCHF diet, with a few side tests of some of my old favorite foods thrown in, which is very, very foreign to me. Daily 2-egg/cheese omelettes fried in coconut oil, 1/2 cup Fage full fat, plain yogurt with a small handful of Costco's, lightly salted, fancy mixed nuts and a little sugar free syrup (Davinci or Torani). Sliced turkey breast with a light coating of mayo. Broccoli, cauliflower and brussel sprouts microwaved and then fried in a little coconut oil in a frying pan. Daily couple cups of coffee and/or green tea with 3 tablespoons of whipping cream and three tablespoons of sugar free syrup with a little unsweetened soy milk to top it off. Next A1c on August 15th and then Dec. 1st.

Show me the links where you posted your two/three/four-hour postprandial readings after eating pizza, pasta, etc., and also show me your fastings for two or three days following your consumption of these high-carb meals.

If you truly are not fudging the numbers, then show us what those numbers are. If you are not willing to show them, then I will continue to suspect that you either are not bothering to test, or you are not being honest with us regarding your test results. Methinks you protest far too much.

Furthermore, I did not tell you to 'put' up or shut up, I told you to 'fess up, as in be honest. To be honest and admit that you aren't testing, or be honest and tell us the true numbers your tests reveal.

Well ... hate to say this, but that 142 is a diabetic number. Most of us try to keep well below 140.

As for what you are ...

You may be in the very early stage that some call "pre-diabetes" ... or ... you may actually be a Type 1 or 1.5 on a "honeymoon." A honeymoon is a period where the pancreas seems to be working perfectly ... but is actually on its way out. This period may last anywhere from a few weeks to a year, after which, high numbers will return, and insulin will be a must.

If you have not been tested for Type -- this is the time. In your shoes, in fact, I would get a full set of blood tests to make sure any diagnosis is both accurate and comprehensive.

Open-mindedness is an attitude we all must cultivate, albeit one best balanced with a healthy dose of skepticism. Diabetic Reversal/Cure is an extraordinary phenomenon for one to claim. Extraordinary claims require extraordinary evidence, of which, so far, I (sorry to say) have seen none.

If you are taking fast acting insulin to avoid spikes, how are you "reversing" diabetes? How much insulin do you use per day? Or are you talking about your body's insulin response?

Hi 1xs!

I have been at this for about four months. I have a big cruise coming up and I was hoping to cheat a bit. So, I tested. I ate some pineapple and it made me very sick -- like up to a week of intestinal pain, feeling out of it and my nose running and my mouth itchy. I guess I am allergic to it. Since I am healing from Celiac Disease, it really affected me. Claritin is helping!

Anyway, I craved my comfort food -- cereal. Ate a 1/3 cup at breakfast, a little more after lunch and then I ate almost a cup dinner. Yikes! I got a reading of 176! So, I think all the cereal just built up.

I am being very good today! Looks like I need to stick to my diet on the cruise. Am worried about finding GF safe food prior to boarding in The UK. For Celiacs eating GF overrides eating for diabetes. I guess a few weeks will not kill me!

Coming back to the original question. Yes. The damage may be traceable (on a meter) or not, but it will be there. Maybe it is very small in nature, so as to not really matter. The choice is yours based on your reactions (YMMV).

If you are taking fast acting insulin to avoid spikes, how are you "reversing" diabetes? How much insulin do you use per day? Or are you talking about your body's insulin response?
I suspect he's referring to the second phase insulin response, since I don't think he uses exogenous insulin, but that's only a guess. I'm still waiting to hear what the 'typically better' number is exactly.

I'm sorry if I said something to offend you? I am being honest to myself as what point would I has in lying to myself? Maybe I'll go back to my spreadsheet and post what the numbers are but honestly Id suspect you'd just argue even more with me about them Shanny and due to "rule #4" as it's been pointed out I'm not sure I could divulge the main reason I believe I'm successful in having control.

Oh well. I'll continue to gleam advice from here and tell what works for me.
