2 cups finely ground almond flour (some are finer than others - Bob's Red Mlll is easiest to find, but it's pretty coarse - more like meal)
5 drops sweetener
4 tbsp. shortening or oil
1 tsp. vanilla extract
1/2 tsp. salt
1/2 cup seltzer water
4 eggs

Combine ingredients & blend until smooth; fry like ordinary pancakes.

Makes 12 pancakes about 4 inches in diameter

Almond Flour

I was trying to find almond flour on the internet and I need to clarify something. Is it best to get the blanched almond flour? The stores that sell almond flour locally are at least a 1/2 hour drive away. I figured that it might be best to just order it online. Does $6 per 1 lb. bag sound right? Oh, shipping is $8. Ouch!

I think the last batch I got was NOW brand from Netrition (dot) com, and they have a flat shipping rate of $4.95 anywhere in the lower 48, regardless of how much you order. If you need any other stuff - get it all in one order.

Received my blanched almond flour from "Oh Nuts" today. As soon as I can see better, I am making the pancakes! Yummy!
