I was going to try making bread with almond flour as an alternative to oopsies but have only found one shop here in Stockholm that sells it and it's very expensive! Now I'm considering buying a coffee grinder and making my own flour from blanched sliced almonds. Does anyone do that? Is it ok to use blanched sliced almonds as opposed to whole blanched which I cannot find here? Coffee grinders are not all the same...there are some that grind, some that chop etc...etc..which is the best? Regular or sweet almonds?

Do you have a food processor, CD? That's what I use to "grind" mine & I use sliced or slivered - have never tried whole almonds.

I do have a food processor. I was going to try that but was afraid i would turn it all into butter instead of almond flour. I figured a coffee grinder would kill two birds with one stone, allowing me to make flours as well as giving me fresh ground coffee lol.

Either way, you'll have to be careful - just pulse a few times & keep checking it. My coffee grinder works about like a food processor - which is why I mentioned it. ;)

I use whole almonds and a food processor, but I don't overload the processor. Works fine for me.

What is Almond Flour? What is Almond Meal?:
Almond flour and meal are both just ground up almonds. Almond flour is most often made with blanched almonds (no skin), whereas almond meal can be made either with whole or blanched almonds. In either case, the consistency is more like corn meal than wheat flour. I find that for the most part they can be used interchangeably.

What is Almond Flour/Meal Good For?:
Almond flour is good in "quick-bread" type recipes, like muffins, nut breads, and pancakes (see recipes below). It's not good for foods such as bread that require a real dough (you can't knead it). Usually, more eggs are required when baking with almond meal to provide more structure. Almond meal can also be used in breading fish, but care must be taken not to burn it.

Can I Make My Own Almond Flour?:
Yes, you can make it in a blender or food processor, though care must be taken not to go too far, or you will have almond butter! Use fairly small amounts, and pulse until it's meal.

I use whatever I have handy from flax/linseed or psyllium or chestnut flour or coconut flour...I buy them when they are cheap and interchange them....some to gobble up liquid faster than others...

One more thing...almonds in bulk are hefty as far as calories go...so if you are watching your weight as well um try mixing in abit of psyllium...it has ZERO carbs...its not that nice alone so I mix it with a nut flour...

I use Almond Meal which is ground whole almonds. It gives you a darker finished product. There is also blanched almond flour that gives you a ligher looking product. I've only done it once or twice and I have used a Food Processor. I think it would take much longer in a coffee grinder. Most of my recipes call for at least a cup or two of almond flour.

Hi is it OK to ground ordinary almonds to use as flour , the one I used before was given to me. I can't find any under health shops in UK so thought I will try to grind some will this work the same as your flour in US. Thank you

And blanching almonds is pretty easy to do. Just boil in water for a few minutes, and then plunge into cold water. You should be able then to remove the skins fairly easily. Then dry the nut on paper towels. I have a bullit, and use the grinding (2-blade) attachment on that to grind nuts. I also have a coffee grinder, but jsut use it for coffee.

Thank you all for almond flour I have a food blender so I will try. Can you use walnuts like this at all as I have a walnut tree in garden and have lbs of nuts

Again, I don't know why not. You'll have to be careful not to end up with walnut butter I'd think, but even then that should be good on Optimist's crackers! Almonds are not as oily as walnuts, I'd think. Do report on how it goes.

Gretchen, what would happen if you didn't blanch them? I really don't think my friend did that...
My understanding is that the difference between almond flour and almond meal, is that almond flour is made from blanched almonds, and has a finer texture, and almond meal is made from the whole almond, and is darker in color and somewhat coarser and grainier, but it would also have more fiber content.

But I see the Honeyville site differentiates between "blanched almond flour" and just almond flour.
