Made some almond meal (almost to a flour) today...

Just did 1/2 cup at a time in the blender, only pulsing it so as not to over-do it and make butter...

Looks pretty good, I've got a couple cups of it I can now use for some breading, pancakes or whatever. Hopefully it works out pretty well.

I made some pancakes out of whey protein earlier... they weren't horrible .. but they weren't great either. Hoping the almond meal pancakes turn out better. Might even mix the almond meal/whey into pancakes...

We're going to be doing some fried chicken tomorrow with it, using the 'brandi's breading' that was linked to in the Fried Chicken post. Yum.

OK, that's all. Was just excited, lol.

I am so glad that you found out about almond meal/flour. Just be sure and let us know what you think about how it tastes. :)

If you like fish do the Brandi's Breading and Talipia. MMMM good

Yep, I've used Brandi's Breading on darn near everything now, and never been disappointed.

I DO use more parmesan in the mixture than it calls for, if you wanna tinker with the ratio at all . . . I don't measure, but I use roughly equal parts of all three ingredients.

This is GREAT stuff!

I use almond meal with everything. I buy mine pre ground but make cookies, waffles, pancakes, muffins, etc. When I make my pancakes I use vanilla whey and ground flaxseed .


Pancakes/waffles

1/4 cup vanilla whey
1/4 cup ground flaxseed or almond flour
1 t baking powder
1 egg
1 t melted butter, oil or melted coconut oil
1 T Davinci syrup
a little water to thin batter
spices- cinnamon, ginger

frozen blueberries, dark chocolate cup up or chopped nuts
