Hey i'm the first poster here :)

I just want to share this wonderful recipe which i saw on the net. Tried it already and it's great.

Notes:

Ampalaya is also known as bitter melon.

It's a known fact that bittermelon are bitter, but you can eliminate the bitterness. wash the sliced fruit on running water and soak them in a container filled with cold water and let it sit for 5-15 minutes before cooking.


Ampalaya con Carne


You will need:

2-4 medium sized ampalayas
4 cloves crushed garlic
2 tbsp. chopped onion
6 ginger cloves, sliced
½ kilo Beef, cut into 1 x ½ inch strips
¼ cup water
3 tbsp. corn starch
2 tbsp. sesame oil
½ soy sauce
olive oil


Directions:

1. Mix corn starch, sesame oil, soy sauce and 3 crushed garlic cloves. Marinate beef strips in mixture for 20 minutes.

2. Slice ampalaya lengthwise to discard the seeds with a spoon, then cut into strips.

3. In a separate pan, heat olive oil and cook the beef. Set aside its marinade for later use.

4. When already cooked, remove beef from the pan then sauté garlic, 2 ginger slices and onion till slightly brown.

5. Add the ampalaya slices, the beef with its marinade and soy sauce, and simmer for 3 to 5 minutes. Best served hot with rice.

Would you know how many carbs per serving is in that recipe?
It sounds Yummy.

Well, as recommended with any new foods, Diabetics should
test before they eat and 2 hours after to see how their blood
sugar is affected.

Hi Terrie. Thanks :). I am not too familiar with carb counting, sorry. Though I entirely agree with what you said to test before eating. At least diabetics will know the effect of the dish after they eat it - hopefully it does not make sugar level that high. I forgot about the rice thing sorry. I am a heavy rice eater. I am not diabetic my grandmother is and also my aunt and a friend. Surrounded with close ones with that condition, i decided to join the boards to gather infos and and maybe help other people if i can. :)

Ya, that "rice thing". :rolleyes: Diabetics should try to stay
away from white foods like white rice, breads, white flour
foods like pasta, etc. since it raises their sugars quite a bit.
If a Person is disciplined they can eat a small portion. People
on Insulin can eat a portion also.

Brown rice, whle wheat breads, whole wheat pasta, etc. is
recommended.

Well, try and stay away from Diabetes as long as you can by
eating the better foods. That's Nice of you to try to educate
other People where you are Otep. :)
