Linda, when researching diets prescribed for diabetics a few centuries ago, I read about a "potato diet".
There were two schools of thought in the 17'th century. 1. Restrict carbs to prevent high blood sugar levels, and 2. Eat lots of carbs, because the sugar was being spilled with all the urine and it needed to be replaced to restore good health. Guess which school won out? Yep, a high carb diet was strongly advised by many doctors for many years.
