Any Deviled Egg Ideas?

I eat 2 eggs every morning for breakfast but read that egg whites are all protein, no cholesterol, which prompted me to buy a package of 12 hard-boileds. I popped the yolks out, now I have 24 little Orphan Annies peeping at me, begging to be filled. Obviously, I don't want to use the yolks to make a deviled egg filler because I don't want to over-egg myself. Does anyone have a decent low-carb idea of what to fill these guys with?

Beats me, Rosie . . . there's nothing more low-carb than eggs. I love deviled eggs - yolks & all. I don't think it's possible to "over-egg" ourselves. Do you know that our own bodies manufacture 85% of the cholesterol we need? Yes, we NEED cholesterol to have a healthy well-functioning body. Dietary cholesterol has essentially NO impact on blood lipids levels. Remember the Ancel Keys thing? All lies - that crap about dietary fats/cholesterol being dangerous.

If you really insist on throwing out the yolks, I guess you could fill the "orphans" with some sort of cream cheese spread or perhaps a tuna salad or something of that nature . . . but I hate seeing you misled about this. Eggs are one of the pillars of a healthy diabetes diet, and the whole egg comes as near to being the perfect food as anything on the planet.

I know, Shanny. It's going to take some time to stop buying into all the crap I've been taught all my life about eggs and fat killing your heart, bacon grease clogging the arteries. We've all been brainwashed by this in America, so it lingers in the back of my mind just like the concept of heaven and hell if I do something wrong.
The yolks are the best part and yes they are healthy and very good for diabetics. But if you don't want to eat them, make your own huumus and put in the center. You could also use some spiced up chopped artichokes, cauliflower, spinach pesto, etc. You could also saute mushroom with some garlic and onions, then puree them and add the middle. You could do chicken or ham salad in the middle. Lots of ideas, but I like the traditional deviled egg with the yolks.
