Beats me, Rosie . . . there's nothing more low-carb than eggs. I love deviled eggs - yolks & all. I don't think it's possible to "over-egg" ourselves. Do you know that our own bodies manufacture 85% of the cholesterol we need? Yes, we NEED cholesterol to have a healthy well-functioning body. Dietary cholesterol has essentially NO impact on blood lipids levels. Remember the Ancel Keys thing? All lies - that crap about dietary fats/cholesterol being dangerous.
If you really insist on throwing out the yolks, I guess you could fill the "orphans" with some sort of cream cheese spread or perhaps a tuna salad or something of that nature . . . but I hate seeing you misled about this. Eggs are one of the pillars of a healthy diabetes diet, and the whole egg comes as near to being the perfect food as anything on the planet.
