I make baba ganouj fairly often -- LOVE it! Do try -- I know you will love it too.

It is particularly good on flax crackers, or as a veggie dip.

We eat baba all the time, it is delicious. I also like to make eggplant parmesan but bread in almond meal instead of flour.
