I like banana pancakes (batter made of small piece of banana mashed with baking powder, 1 egg) but I've really got to dial down my carbs after some holiday indulgences. So today I used 1/2 mashed ripe avocado in place of the banana. Yummy, if you can get over the fact that your pancakes are green!

For some reason I have 'green pancakes and ham' rambling around in my mind....

Sounds good. I have a banana flavoring from Capella that I use with avocado - mashed avocado with pieces of unmashed bits still in it, has the texture of bananas, and the flavoring gives it the taste - but, as you said, you have to get over it being green.
