For the newbies who are looking for recipes... this is how I get my diabetic husband to eat his veggies when he is sick of tossed salad. It is a basic recipe that you can tweak and make your own. You can reduce or eliminate the salt, change the spices and change the veggies to low carb ones of your choice.

The recipe calls for Dixie Carb Counters Thick-It-Up. and if you don't know yet, it is one of the no-carb products used to thicken gravies and sauces. If you can't find it in a health food store near you, you can purchase it online at Netrition.


2 lb. beef, cut up, sprinkled with garlic powder
2 tbsp. butter
7 cups water
2 ribs celery, sliced
1 tsp. oregano
1/2 tsp. garlic powder
1 1/2 tsp. salt
1/8 tsp. black pepper
1 can cut green beans, drained
low carb vegetables
2 tbsp. worcestershire sauce
2 tsp. Thick-It-Up

Prepare and cut up enough onion, carrot and cabbage to make 6 cups, counting the green beans. Set aside.

In a large pan, brown the meat in the butter. Stir in the water, celery, oregano, garlic powder, salt and pepper. Cover, bring to a boil, reduce heat and simmer 1 hour.

Add the vegetables, bring to a second boil, reduce heat and simmer 30 minutes, or until veggies are as done as you like.

Add the worcestershire sauce, then the Thick-It-Up. Stir and simmer 5 minutes, remove from heat.
