I dont eat liver after been forced to eat it cold as a kid, but my family loves it, so I often make it to them, and then I enjoy the sauce, some bacon and vegetables.
My kid have always loved it when I put pieces of liver, a couple of egg, onion, grated cheese and some spinach in the foodprosessor and make a "sauce" which I then use to make pancakes.
They eat it as it is or on a sandwich or for dinner with sauce and mashed celery and of course lot of vegetables.

I grew up in the South and we ate most every thing on a cow but the huff and the hide... there were some things I wouldn't eat but the liver certainly wasn't on the list. I very much enjoy liver prepared properly. The biggest mistake I see people make in cooking liver is over cooking it. Fried liver smothered in onions and gravy is wonderful, simply wonderful...

bugg:pchicken liver is also quit delicious...
