Yea, I like coffee cake, makes my first breakfast easier. Cup of coffee, slice of cake, hour later have some breakfast.
I use pecans because they are cheaper here in the south, Almonds would probably work just fine. I used 3 cups of whole pecans, gound them down almost to butter with my new food processor, yes virgina there is a santa clause.
2.5 cups ground pecans or almonds
1/4 cup of melted coconut oil
pinch of salt
teaspoon of baking soda
1/2 cup slenda
3 eggs
8 ounce of softened cream cheese
1/4 pint of blackberrys, cut up
handful of crushed walnuts
mix everything together except the blackberrys, walnuts, pecans
when smooth, pour in the pecans, when mixed add the walnuts, remove from the mixer and hand fold in the blackberrys.
I poured the batter into a small greased cass. dish and baked for 45 minutes at 350, or until a fork comes out clean. really, really good with coffee and whipped cream.
