What was your reading before you ate lunch? Its hard to tell if your blood sugar went down any after eating if you don't know what it was before you ate. I would guess the thing that spiked your blood sugar was the rice. While the brown rice is better for you than the white rice...it still contains just as many number of carbs, it is simply digesting at a slower rate. The rice contained about 25 grams of carbs....I cant tell how much buttermilk you had, but 1 cup has about 13 grams of carbs. So, that is at least 38 grams...probably more when you add the spinach and depending if you had more of the buttermilk. Its easier to tell what you are asking if you know the premeal number also. If you were 110 before eating and 2 hours later were at 180 then that is a significant rise and you had too many carbs....however, if you were 200 before eating and 180 2 hours later then the number of carbs you ate with the meal were not too bad.

What did you have for breakfast that caused such a big rise that did not go back down? I would guess your problem is the amount of carbs you are eating. A little more information would be helpful :)

Sounds to me like the spikes you are getting are probably caused by all the rice and wheat you are eating. Maybe try cutting back the number of carbs you are eating and substitute more vegetables, protien and maybe a small amount of fresh fruit instead. That will probably make a difference.

Carbohydrates (Carbs) raise BG
All carbs raise BG... Rice wheat bread pasta bananas honey potatoes sugar...

fat slows the BG rise, fiber slows the BG rise, protein slows the BG rise.
