Here's a hefty salad which recipe came from a lady on another diabetes board. It makes a ton! I halved the recipe & still have nearly a gallon of salad! I'm taking her word for the carbs - I haven't recalculated it yet - but I gotta tell ya: 1½ cups of this will FILL YOU UP! :D

Broccoli Cauliflower Pasta Salad

1 head broccoli, cut up
1 head cauliflower, cut up
10 oz. pkg frozen peas
1 medium red onion, chopped (I prefer a bunch of thinly sliced green onions)
2 ribs celery, chopped
12 oz. bacon, cooked and crumbled
8 oz. pasta, cooked and drained
8 oz. cheddar cheese, shredded

Mix ingredients in a large bowl (make it a VERY large bowl) and set aside.

Dressing:
1 pint Hellman's mayonnaise
1 cup sugar (equiv Splenda, Truvia - etc.)
4 Tbsp vinegar
dash of salt (optional)

Mix ingredients well - I whip 'em a little to get all the mayo lumps out.

Add dressing to salad and refrigerate for at least 3 hours.

Okay, I recalculated today:

Serving = 1 cup or 105g
calories: 262
calories from fat: 189
total fat: 21g
saturated fat: 5g
trans fat: 0g
cholesterol: 16mg
sodium: 346mg
total carbs: 12g
dietary fiber: 7g
sugars: 2g
protein: 7g
vitamin : 18%
vitamin C: 38%
calcium: 9%
iron: 4%
