My first question is, are you looking for a meal or a snack?

But there are some foods that could fill either need depending on your eating plan. Hard-boiled eggs could serve as a proper breakfast or a substantial snack. Lately I've been getting into these egg-white wraps which look like tortillas made with egg whites (and probably lots of other non-whole-food ingredients); a little butter or even peanut butter and some seasoning and it's like having a few bites of a bagel. Cheese is another popular snack; the protein can satisfy hunger for a fairly long time. Sometimes I like to have some vegetables, too, like celery sticks or cucumber slices orr pepper rings or even pickles. Pickles, maybe, are not the most compatible snack with coffee but it's all down to what a person likes, eh? 🙂

What I want ideas for is a mid-morning diabetic friendly biscuit or cake for morning tea.
I usually have an egg for breakfast, lunch is home made soup and 1/2 a muffin and a small piece of fruit and mid-afternoon is a cup of tea/coffee with a biscuit and dinner is usually fish or a small serve of meat with plenty of vegetables and a serve of fruit.

Here is a link to Optimas crackers if you like to bake. Not sure if this would equate to what you term a biscuit. Typing cracker in the search communiity at the top of the page should find other cracker recipes as well. I know I've seen some versions in health food stores, but don't remember if they were called Wawa crackers or something else. There are several cakes in our recipe forum that should be diabetic friendly. Searching for biscuit should also bring up some good recipes. As far as cake, searching for mug cake should take you here.

Thank you for the links to the recipes. I think I will be trying a few of those.

bundyanne, you might also use your favorite Web search tool to look for the phrase keto cakes (or cookies or biscuits). There are many recipes out there adapted with ingredients like almond flour and eggs and cream cheese that more closely mimic tradtional carb-laden baked goods.

Looks like you eat a pretty good bit of carbs. My suggestions come from our (MAD) very low carb, high fat diet, but perhaps they will help you. First of all, figure out three or 4 different immediate early AM snacks to go with a cup of coffee and stock up on them that way you will not be grabbing just anything and will have better control of your BG. I count the following with coffee as 16+ grams giving of carb and give 2 units of insulin, even though there is no carb in any of this except perhaps a little in sausage or cheese and a very tiny bit in the eggs. It still drives his blood sugar up enough to need insulin. The caffeine in one cup of black coffee drives my husbands bg up the same as 8 grams of carb. To go along with the coffee we choose a protein snack like Bella cheese, string cheese, or a boiled egg or a few strips of bacon. The fat will help keep the bg more level. Ronnie has significant dawn phenomena and the only way to combat the early AM rise in blood sugar is to eat protein and fat soon after rising in the morning. If we dont do that we will have too give him correction boluses of insulin till past noon. That usually holds down his appetite and blood sugar till we sit and have a bigger meal for breakfast or an early lunch. I try to give Ronnie brain octane coffee and a cheese or egg snack and than flax porridge with 6 cranberries or 6 black berries. and another egg or meat . Usually only eat twice a day and this works for us. The meat dish is usually bacon, sausage, salmon/fish or left over meat or chicken from last nights supper. We sometimes have a slice of buttered Unbread, but too much of that over a week or two and we find our weight climbing. f

I agree with itissteve - i enjoy Paleo Thin Crackers, Primal Thin Crackers, and Keto Thin Crackers. They are all made by the Julian Bakery company. I was afraid that they would taste like cardboard, but i was hooked fairly quickly. They are low in carbs. Paleo Thin (Salt and Pepper) are 7gr of carbs in 6 crackers (and i was surprised the crackers were NOT the size of dimes LOL). And in the spirit of transparency, i shared this with a friend who is also a T1D and she said she only liked 2 of the 3 flavors.

I've been buying Lowrey's Bacon Curls, microwaveable pork rinds. They are ready in 2 minutes and much more satisfying than a bag of pork rinds. I recently started dressing them up with Kernel Seasons popcorn seasoning (nacho cheese or ranch). I get them at Kroger, but they probably have them elsewhere. Kroger's price is much less than Amazon.
Edited to add: Maybe not so good with a cup of tea :)

I think I've tried them somewhere along the line. I liked them. Hard to find up nort' here, though. We don't have Krogers (we don't have any national chains except for Target (natch) and Walmart; kind of an oddity in that respect). There are some supermarket chains that don't carry any brands of pork rinds, never mind the good ones.

I've had the hot and spicy Lowery's but not the originals. They are pretty dang good!!!
