This is a recipe my mother has been making for holidays since I was a small child. I've adapted it for low carb. It's delicious, and the only reason I'm going to be able to resist all the pies on Thursday.

Cherry Cream Freeze
1 1/3 cups sweetened condensed milk substitute (half of this recipe)
1 12 oz pkg frozen sweet dark cherries
1/4 tsp almond extract.
2 cups of stiffly whipped cream

Combine first 3 ingredients, then fold in whipped cream. Gently turn mixture out into a 9x5x3 inch loaf pan. Cover tightly, freeze 24 hours or until firm. Unmold onto serving tray. Makes 2 qts.

Total recipe using Publix brand frozen cherries around 70 grams of carb.

Next time I make this it will be with Raspberries.

Probably delicious. The original recipe also included a can of crushed pineapple. I didn't want the added carbs but it would have been better with it. The nuts might be a good substitute.
