Chicken Avocado Salad

1 medium avocado
juice of one lemon (about 2 tbsp), divided
1 tsp. salt
1 small (3¼ oz.) can ripe olives, drained & quartered
2 cups chopped celery
2 cups diced cooked chicken
1/2 cup mayonnaise
lettuce as needed

Dice the avocado & sprinkle it with half the lemon juice & the salt.

Combine avocado, olives, celery & chicken.

Add remaining lemon juice to mayonnaise and blend until smooth.

Add dressing to chicken mixture; toss gently to coat.

Refrigerate until ready to serve.

Serve on bed of fresh greens.

(bet this would be good in a stuffed tomato too, y'think?

Whoa baby!

Forget everything I said about bed of greens or stuffed tomato . . . wrap this up in a nice high-fiber tortilla and ENJOY!

Well, you could line the tortilla with a fresh crunchy lettuce leaf - that's what I did . . . OMG it's good! :eek: :D :D

Yep - this filling was so much better in a wrap, I hadda go back for a second one. :D Lucky I've had a really low-carb day, because I clocked only 114 (6.3) after having two of them!

Next time I'll have to try it heated - thanks, Peter. I think we share a lot of the same dietary preferences.

Aww Shannon, I wish I was like you!! I am a pin crusion when it comes to meals. :( But a delicious food. :eek::eek::D
This sounds delicious. I'm thinking little "boats" on endive leaves would be yummy, plus they would look cute. Something that could be served to guests without worrying about messing with their health.
