Chocolate, Peanut Butter Brownies
I ran out of protein powder so I needed something else to make a quick breakfast with, came up with these. We had these last night with sweetened whipped heavy cream while they were still warm. Pretty good. I had a few squares this morning for breakfast. They came out moist and chewy, which is what I was shooting for.


1 16oz jar of crunchy peanut butter, warmed in the microwave.
2 cups of Almond flour
1/2 cup Erythritol
1/2 cup Splenda
4 eggs
1 tsp of baking powder
1 tsp Baking Soda
pinch of salt
1/4 cup Heavy cream
1/2 cup of Cocoa
1/2 tsp of Vanilla

I creamed the eggs, sweeteners, peanut butter, then added the almond flour, and the rest of the ingredients.

This made a dense thick dough, which I rolled out a 1/4 inch thick in a large cookie sheet. I baked them at 350 f, for 15 minutes or so. They rose to about 1/2 inch thick, so they could have been made a little thicker. They are definitely a brownie, not to sweet, chewy, nutty. Passed the spouse test last night and again this morning for breakfast.

It dawned on me this afternoon the only true way to enjoy these brownies is with a good thick heavy layer of chocolate frosting with chopped pecans. I whipped equal amounts of heavy cream and cream cheese, along with Splenda, a few packets of Sachrin and Nutrasweet ( it rounds out the sweetness ) with some cocoa. Nice thick heavy frosting. Wife and I enjoyed several squares this afternoon.

You just never quit, do ya?! I'm sure glad you keep coming around - what would we ever do without you & your recipes?! :hug: I haven't baked the cookies yet, but I have all the fixin's now . . . maybe tonight while the World Series is on. (how 'bout them Cards?!!)
