This recipe looks so good. I don't have a food processor. Is there anything that can be substituted for it? It has been sooooooo long since I enjoyed more than a "whiff" of a cracker :)

Okaaay . . . so the Dutch Bulk Food Store isn't gonna help me with psyllium . . . rats! I better call up there before we plan the excursion any further.
Shanny - I didn't know exactly what it looks like either without buying a large container of it. So I 'googled' it and this is what I came up with. At least you can get an idea of how different forms of it look.

Shanny - You could always use the old excuse my sons used to give me when questioned "why did you do this?" They would tell me "the Devil made me do it" :)

btw........I have my first batch in the oven as we speak......

Another name is: "Vidunderlig" cracker :)
I just put my crackers back in the oven for the 45 min suggested.........uh...did I mention that I need to work on patting the dough a little more evenly next time? As a result some of my crackers were a smidgen thin around the edges (what a shame cuz' now I can taste them early) I'm sort of glad the "Mr." is at work tonight because when they cool - I can have them all to myself :) :)

These Vidunderlige knekkebrød will be perfect for me to take with me when my husband and I go to the food market. There is a HUGE market about 25 minutes from our home and it takes much walking just to go through the entire store. Almost every time we shop for food I end up with very low blood sugar numbers.
