1 lb. fresh cranberries
2 seedless oranges
1/2 cup unsweetened shredded coconut
2 cups granulated artificial sweetener or equivalent in drops or liquid
3/4 cup chopped pecans
1 small can crushed pineapple, drain & rinse, squeeze as dry as possible
1 small box sugar-free cherry or cranberry Jell-O
1/2 cup water
1 tsp. pineapple flavoring

Put cranberries & oranges through a food chopper. Stir in coconut, sweetener, pecans, pineapple flavoring. Place 1/2 cup water in a saucepan and heat to boiling. Add Jell-O and stir until completely dissolved before adding to cranberry mixture. Add crushed pineapple and stir to blend well. Keep refrigerated up to two weeks, or may be frozen.

This looks good - and I'm a real sucker for anything with coconut :)

Since it's just going to be me and The Child for dinner this year, I wasn't planning on having any cranberry stuff (Child not a fan), but I just might reconsider!:decision:

I wish I could find a recipe of the canned form. I love it.
Boil raw cranberries in a little water until soft. Mush up and press through a strainer to get as much juice as you can out of them (or not, depending on whether you like the clear sauce or the sauce with bits of cranberry in it).

Return juice to the pan and add quite a bit of WaldenFarm's Cranberry Spread. On low, heat until the spread has melted and gone semi-liquid. Stir and taste - you probably won't have to add any sweetener.

Then allow to cool and it will become jell-like again.

Works for me.
