These aren't real Fritos like "chili fritos", because we just broke up low-carb taco shells, but the effect is the same - delicious! :D

Amounts aren't precise, because when you start with leftover cooked chicken, just about anything can happen & it isn't always pleasant either . . . but tonight the Leftovers Fairy smiled on me. ;)

1/2 medium onion, chopped
1 spoonful diced jalapeños (I keep a jar in the fridge, but fresh or canned would be good too)
1/2 cup sour cream
1/2 cup sweet cream
1/4 cup cream cheese
2 oz. shredded colby or cheddar
4 or 5 large mushrooms, sliced or chopped
1/4 cup cashew halves
salt to taste
2 cups diced cooked chicken

Combine everything in a skillet & warm over medium heat until onions & mushrooms are cooked & the creams/cheeses are all melted together. Use additional sweet cream to keep mixture from being too thick.

Crunch up several taco shells in a bowl & top with chicken mixture. DH plopped about a cupful of salsa on his, once he tasted it to determine I hadn't gone overboard with the jalapeños. I'm not real big on salsa, and I enjoyed mine plain. I was thinking of grated cheddar on top, but didn't even do that - it's plenty rich without more cheese.
