I forgot to add, sometimes cooking in a crock pot cooks the life out of food. If you stir in as many of the spices/herbs as you can towards the end of the cooking time instead of at the beginning, the food will have more flavor.
That reminds me of my former life. We had 5 kids that did all sorts of sports. I think for about 20 years we were never all home for dinner at the same time. I would recomend Dana Carpender's cookbooks. She has 5 or 6 great low carb cookbooks. One of them is "Slow Cooker Recipes". She has 200 recipes, all low carb. I got mine at Amazon but you could try Borders , if they have anything left.
