I have soooo been looking for a low carb breaded, fried fish recipe that uses only almond meal as the flour. I will be trying this one tomorrow. I wonder if it would work for fried chicken. It would be nice to be able to kill two birds with one stone.

For what it's worth:

When doing this with zucchini, it needs a bit more heat in the seasoning mix. Maybe some cayenne or maybe cumin.

Just something to ponder.

I fried flounder fillets today, yummy. It is a good breading recipe and I'm sure it will work fine for chicken or veggies.
