I've played around with using instant pudding mix with different ingredients to see what works best and is better for me.

Here is what I have come up with:

By using sugar free/fat free jello instant pudding mix (any flavor you fancy), instead of using milk, I use either heavy cream or whipping cream (I actually prefer the whipping cream) along with either almond milk, or coconut milk, and coconut oil. I use my Magic Bullet (for the small boxes of pudding mix - 2 cup one). If I use chocolate pudding mix, I use 1 cup coconut milk and 1 cup whipping cream along with 1 or 2 tablespoons of coconut oil. Mix is magic bullet for approximately 1 minute. The whipping cream makes the pudding set (since almond milk and coconut milk doesn't really "set" like milk will with the pudding mix). By using only 1 cup whipping cream and 1 cup coconut milk or almond milk helps to cut back on caloric intake, and by adding the CO I get part of my daily intake for that. With chocolate pudding and coconut milk makes it taste like Almond Joy candy bar. I've used banana cream pudding mix with coconut milk and taste like coconut banana cream pie! You can actually create any combination that makes you happy, happy, happy. This comes out nice and thick, and you can eat right away! I usually have this as a treat after work and before a workout. Just thought I would share something so sweet and tasty!

Test after eating -- even in the amounts of SF pudding mix I use to stabilize my whipped cream (2 tsp per cup), my blood sugar tells me I have consumed the "starch, modified."

YMMV, in fact it may vary a LOT from mine ... but do test.

Oh, and you can also try mixing some cream cheese into that! Yummy!

Okay Foxl, what do you mean by Starch, modified? My problem is staying with just one serving...it's so yummy I tend to eat the whole thing! When I do that, it does affect bg's a bit, but if I can just get myself to NOT eat the whole thing at once I'll be fine.
Oh, and btw, what does YMMV stand for, and also I should try the cream cheese in that...probably would taste like a chocolate cheese cake! YUMMY is right!

Sugar free pudding mixes thicken by themselves due to the principal ingredient being food starch, modified. I am unusually adept at digesting said starch, but Your Mileage May Vary, as we like to say.

And, as I have recently taken to saying, even if it does not affect your BG, it may indeed be raising your blood insulin levels ... so you may wish to eat, in moderation.

We had a discussion on another forum about the carbs in heavy cream. Even though the label says 0, most D's assume there are carbs in heavy cream especially when you are using a lot of it. Personally I stay away from the boxed mixes because of too many chemicals and starches. I think a small box of sugar free pudding has something like 7 carbs per serving and there are usually 4 in a box , so that is 28 carbs before you add anything else. On low carb forums I have seen recipes for truely low carb puddings and mousses. Check out Linda's Low Carb Menus & Recipes - Home for some ideas.
