Found a Keto recipe for some lasagna without noodles!

It's just a standard lasagna recipe, except you switch out the noodles for thin sliced eggplant!!

I made some today for lunch for work this week. Instead of ground beef, I used sliced up turkey meatballs. It turned out really good!!!!

Cool! Do they used prepared tomato sauce or do they have you make your own? Link to a recipe?
I don't remember which recipe I saw first, but I usually just get the general idea and go off on my own. This recipe is probably the closest to a basic recipe for this....

But I peeled my eggplant and used my veggie mandolin to slice it up to about noodle thickness.

Here's how I layered mine in the pan, from the bottom up....

Eggplant
Prego jarred spaghetti sauce
Chopped onion
Cottage cheese
Eggplant
Chopped turkey meatballs
Shredded cheese
Chopped onion
Sliced mushrooms
Eggplant
Prego jarred spaghetti sauce
Grated Parmesan cheese on the top

I baked it at 350 for an hour, but I turned off the heat after 45 minutes.

I've been eating on this for lunch at work this week and have not gotten tired of it. Of course, I LOOOVE anything with tomato sauce.

I prefer Prego sauce because it's thick and isn't sweet like all the others.

If you love eggplant, you might slice them a bit thicker. If you don't like eggplant too much, then thin sliced is barely noticeable in this.
