I made this for the first (and last) time today. It tasted fair, but of course not like potato pancakes. Not worth 30 minutes of pre-cooking and stirring. But I thought maybe someone might want to play with it to make it into a workable recipe.

(Faux Potato Pancakes) Latkes

1 slice bread
1 egg, beaten slightly
1/8 teaspoon salt
16 ounces cabbage
1 medium onion
2 tablespoon butter
2 cloves garlic, minced
2 tablespoons pure olive oil

Chop the bread in a food processor to make crumbs, set aside.
Stir together the egg and salt, set aside.
Chop the cabbage and onion in a food processor, then place in a skillet with the butter and garlic. Turn heat on high. When skillet starts to heat some, turn heat to medium-low. Saute the vegetables, stirring often, until the liquid evaporates, about 10 to 15 minutes.
Stir in the bread, heat and stir for15 minutes, or until the mixture pulls away from the skillet. Place mixture in a bowl until cool enough to handle with your hands.
Add the egg mixture and shape into small patties. Saute in the olive oil, flipping once, until golden brown.
