FAUX MASHED POTATOES

1 head cauliflower
4 tbsp. butter
salt & pepper

Break up cauliflower & steam or cook done but not mushy. Drain. Let sit 20 min. & drain again. (This keeps the cauliflower from leeching water.) Process in food processor. Place in pan over low heat, stir in the butter until melted. Remove from heat, salt and pepper to taste.

Does it taste like cauliflower?
If you eat it as-is, yes. But if you put a meat with sauce on top like pepper steak or the sauce from mushroom chicken, or some sausage gravy, that's a different story.

DH has always claimed he hates cauliflower unless I drown it in cheese, but when I serve faux mashed with sauce or gravy, he never fails to say it tastes great. And he has also been gobbling up the faux potato salad.
