I have a good friend that brought me a 5 gal bucket of fresh yellow squash yesterday... :D Man Please...!!! I do love squash...

An easy yellow summer squash recipe.

Ingredients:

10 small yellow squash sliced
1 medium Vidalia onion chopped
1 or 2 tablespoon bacon grease :D
salt and pepper to taste (I like a good bit of pepper)

Preparation:

Slice squash in medium slices. In large iron skillet melt bacon grease; when melted add the squash and onions, salt and pepper. Cover and cook over low heat. When squash starts to become tender, mix and chop the squash a bit. Cook until squash is tender, about 20 minutes or so.

1 cup has about 8 carbs

I'll have to try bacon - never thought of it with squash! But then, I didn't eat bacon until I was dx'ed because of the fat, ha!

I make my yellow squash with onion and lots of fresh basil.

I have my mothers cookbook which I consider my most cherished possession. If I could only take one item from the house before it was burned to the ground it would be my mothers cookbook. It not only has wonderful recipes from the ladies of the First Methodist Church of Jesup Ga. but it's full of her notes and hand written recipes. It's also full of recipes cut from the newspaper and magazines most with personal notes written in the margin.

She cooked a wonderful squash casserole which I was looking for to share with the forum. While thumbing through the book I ran across a note she had written and stuck in the casserole section. It brought tears to my eyes, a lump in my throat and I had to sit down when I read it... A couple of months before she died I ask her for the recipe of an asparagus casserole that she cooked which was delicious. She couldn't remember anything about it. The note read, "Here's the asparagus recipe you were asking for. Hopefully I will remember to give it to you. If not it's in the middle of this page by Mrs Thelma W. Thomas. I love you. Mother".

Needless to say, it's been an emotional day even for an old crusty lawyer...I really don't know how to close except...

"Thanks for the recipe Sweetheart... I love you too... Bill"

You made me tear up a bit there too, Bill. I lost my dad 20 years ago, and my mom 23 years ago... and I have an old potato peeler that would take you 30 minutes to peel 1 potato with... but it's my mom's and I won't throw it away for anything! I get teary eyed, almost everytime I run across it in my silverware drawer. What my friend would say is that you running across that was just a wink from heaven! :)

Letters/notes/recipes in Mom's handwriting are some of my most cherished belongings too. But #1 is her old cast iron skillet which I think belonged to HER mother too. I couldn't manage - I for SURE couldn't cook - without that skillet.

I'm so thankful you shared this, Bugg. :hug:

Such a treasure. Such a lovely and precious note.

I have my mom's also but it's not as extensive as your mom's. She used her mother-in-law's handwritten cookbook from the 1910's-20's to make the most amazing traditional Hungarian dishes. I have that one too, a real gem, only problem is that it's in Hungarian!

that's nice finding a little treasure like that Bugg :D My Nan was a sweet lady and everyone loved her and her cooking... it's a comfort thing when you look back at the memories. I miss her a lot. I'm a bit like her in that I like to cook for people too. In fact I cook her cakes for family and friends. There's some stuff only a Nan or your mum could make well.
