I had a small yellow squash sliced and fried, yum. Only 2 carbs! I was going to use unsweetened cocnut, but decided on flax seed meal at the last minute. It was good.
I sliced the squash coin shaped, rolled it in flax seed meal, dipping it in egg first would have made a crunchier coating. And fried it in hot oil, in my Cast Iorn skillet. Some times I forget the whole world don't eat like I did. They can be left soft, or fried crunchy like chips. Add a little salt and your good to go.
