Nothing can ever take the place of beans in my previous life. But now I miss them a little less.
This is a recipe from a Raw foods website -- Nom Nom Paleo (a great blogger and foodie!) put me onto the concept and I just searched it out. My version is neither all-raw, nor paleo. Just tasty!
Soak a 12-oz bag of raw sunflower seeds overnight in water.
Drain off as much water as you can, and grind to a paste in a food processor (mini chopper works fine).
Add 1/8 onion and 1 clove garlic while grinding ...
2 tsp chili powder
2 tsp cumin powder
1 TBS Miso or soy sauce
3 T Tahini (sesame paste)
1 T vinegar of choice
salt to taste if your chili powder is not too salty
water to texturize.
Makes 8 - 10 servings, not sure of the carbs but sunflowers are 4 g usable carbs per oz ... so maybe 6 - 8 g carb per serving.
I ate as is; you also can dehydrate in a food dehydrator, to warm it before serving.
It tasted pretty hummus-y to us.
