I made some fabulous ice cream today and altho' it may repeat someone I think it deserves a bump as summer weather is upon us.
I took about 1 cup fresh strawberries and mascerated them in 8 t. of erythritol and 1/8 t. of Truvia for a couple of hours, cut small
I then took 2 c. heavy cream
1/2 c. water
2 eggs
1/2 t. vanilla extract (I used more by accident)
1/6 cup erythiritol ( 8 t.)
1/8 t. Truvia
1/8 t. xanthan gum
I mascerated the strawberries in the sugar substitutes (sliced for a couple of hours) and then mixed the other ingredients and added the strawberries and mixed with my old blender stick and then added the other ingredients and mixed well. I froze it in a Cuisinart ice cream machine and altho' it was a bit sweet, it was delicious!
