Got this from a friend and made a few noted changes.

Italian Chicken Bake

Ingredients:
12 ounces shredded chicken breast, cooked
1 tsp dried basil
1/2 tsp dried oregano
3/4 cup Rao’s marinara sauce
6 wedges of laughing cow cheese - any flavor or plain
1/2 cup plain Greek yogurt
2/3 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 green onions

Directions:
Preheat oven to 350 degrees F
Lightly spray a 2 qt casserole dish with cooking spray
Place shredded chicken in the bottom of the dish
Sprinkle basil and oregano over the shredded chicken
  • Additional seasoning salt, pepper, garlic powder may be needed if not using rotisserie chicken.
Dice the green onions and sprinkle over the chicken.
Combine the Laughing Cow Cheese wedges and yogurt in a small bowl and blend together.
  • You will need to soften the cheese in the microwave so that it blends easier with the yogurt.
Spread the cheese/yogurt mixture over the chicken.
Spread the marinara sauce over the cheese/yogurt mixture
Top with the parmesan and mozzarella cheeses
Bake for 25 to 30 minutes or until casserole begins to bubble and the cheese is melted.
Divide into 3 equal portions.

Notes:
  • This recipe called for using “light”, “low fat”, or “reduced fat”, ingredients. I amended it to use the full fat versions of the cheeses. All I could find today was 0% Fat Fage, but will use 5% in the future.
  • I did not use rotisserie chicken, boiled then shredded boneless chicken breast tenderloins and didn’t get enough extra seasoning in the chicken. Other than that, I’m calling this a keeper.
  • Added the green onions

We just made a modified version of your modified version :D We had leftover turkey breast. Instead of Laughing Cow cheese used ricotta cheese and subbed sour cream for yogurt. Left out the green onions because we didn't have them and added more spices because it wasn't rotisserie chicken. It was delicious❣My husband did most of the hard work--he used to be a chef.

Yes, because it would save some time and you had plans for the rest of the chicken. Not sure how seasoned it is because we don't eat much rotisserie chicken. We usually just buy a package of thighs or breast tenderloins when we eat chicken. I'll know next time to check the chicken flavor. BH pulled the chicken, she said you can wait a half hour for it to cool or run some cold water over it and get it done. I made the wrong choice.

I think the ricotta would be good too. Will try that next batch, along with a little more salt, pepper, and garlic powder, maybe a little more basil and oregano too. Will definitely keep it in mind for leftover turkey in the future. As far as difference between greek yogurt and sour cream, I tasted plain greek yogurt once and thought it tasted like sour cream, just thicker.
