Looking for Bran muffin recipe

I've been searching for a fairly low carb Bran Muffin recipe, but so far have not been successful. I noticed that a member, Dan1966, said that his wife was making him palm sized muffins - but there was no recipe posted with it.

This morning I bought a single bran muffin at the store. It looked delicious - had raisins, shredded carrot, coconut and walnuts in it. Then I put it on my Salter scale and typed in "bran muffin". Holy Cow !!! The muffin that looked so delicious weighed in at a 'whopping' 91.9 carbs, and that is just one muffin. Needless to say I cut it in 4 pieces and ate only one piece this morning along with my 1/2 cup yogurt.

Since I haven't found a recipe, maybe I should not be eating something like this even if it was made with whole wheat flour and bran bud cereal. Anyone else ever had a desire for muffins?

The bran itself is not the culprit . . . but both Bran Buds and All-Bran are loaded with sugar and HFCS (high fructose corn syrup). Raisins, whole wheat flour & even the carrots, can all spike us. Coconut alone isn't bad, but most of what we're offered is sweetened coconut. There are sources for unsweetened coconut, but you prob'ly aren't going to find it on the shelves at Walmart!

I'll be on the lookout for muffins made with plain old millers bran - that's what I always used in my bread recipes back before D put a stop to my bread consumption. Maybe some of our creative cooks can come up with something using almond or coconut flour or another alternative. How are you with soy products?
