Going low carb is a change of diet and doing almost any will cause gastric upset. Used to be that rice would make me toot like it does for people who eat beans while beans had no ill effect on me. Diet change and age changes that so I can eat more rice now. But it is not a lot as any white rice especially sticky rice is not good for us.
More complex foods such as most low carb takes longer to digest so there is more acid. So volume and timing are important. Bigger lunch and smaller dinner goes a long way to reduce reflux as you are more vertical. Early dinner with little to no snacking will go a long way. If you are a back sleeper having a bed that allows head raises or appropriate pillows will do the same. Having a protruding belly and sleeping on it is the worst.
Not everyone is built for low carb, but I think everyone is built for moderate complex carbs. A gradual changed works best over the long run since this is a marathon not a sprint.
