Low-carb Cheese Snack (Mexican Fudge)

I have always used this as a snack/appetizer, cutting it into about 1" squares or diamonds, but a friend of mine adds a layer of raw shrimp to his before he bakes it, and I think uses it as an entreé. Adding diced ham, crumbled bacon or sausage also makes a more substantial meal to be cut into larger pieces instead of cubes, and eaten either hot or at room temperature.

1½ cups heavy cream
3 extra-large or jumbo eggs (use 4 if they're smaller)
1 pound pepper jack cheese, grated
1 pound sharp cheddar cheese, grated

Beat cream and eggs together
Layer cheeses in 9x13 pan and pour cream mixture over cheeses.
Bake 40 minutes at 350°F (175°C), or until knife inserted in center comes out clean.
Cut into diamonds or squares.
