5 eggs, beaten
1/3 to 1/2 cup unsweetened coconut milk
1 cup unsweetened shredded coconut
1 20-oz. can crushed pineapple - drained, rinsed, liquid squeezed out
sweetener to equal 1½ cups sugar (I used 36 drops EZ-Sweetz)
6 tbsp. butter, melted
dash of salt

Combine ingredients; pour into greased baking dish; bake at 350° (175C) for one hour. Allow to cool slightly before serving.

You could always use a nut crust with this filling if you like.

One serving = 1/6 of pie

Thanks for posting this - I LOVE coconut & keep coconut milk on hand all the time.

I've found that I use much less sweetener the longer I eat lower carb. I guess my tastes change over time.

I'll give this a try soon - not this weekend, I'm going camping, but when I get back for sure!
