1 c walnuts plus 1/4 c or more parmesan (canned is fine here, or fresh shredded) Chop together in food processor until fine, press into bottom of pan. No need to pre-bake.
Spinach leaves and stems -- 1 lb, sauteed in olive oil, add to:
2 eggs, 1/2 c cream, blend in blender until spinach is smooth.
1 small onion, clove or 2 garlic, can (or frozen pkg) artichoke hearts sauteed in olive oil and season with salt, pepper, nutmeg, lots of dill (dried or fresh).
I think I have a variation of this in recipes already ... this is the latest incarnation!
1 block feta cheese.
Pour spinach mix over nut crust, distribute feta over vegetables, bake at 350 for 50 minutes.
My husband and 8 year old son loved this, but my husband says it is not spanakopita as he usually eats it.
