Food Ingredient Cake Baked goods Cuisine


ok I used to make this all the time but it wasn't diabetic-friendly so I decided today to try and fix that and it worked!!!!!!!!!!

Ingredients

Fudge
185g butter
1/4 cup cocoa
1 cup sugar substitute of choice
2 eggs
1 cup almond meal

Cheesecake
250g cream cheese
1/3 cup sugar substitute of choice
1 teaspoon vanilla
1 egg

Method
  • Melt the butter with the cocoa ( I nuke it)
  • Remove from the heat
  • Add sugar and then whisk in the eggs
  • Stir in the flour and beat the mixture until smooth
  • Pour the mixture into a greased tin (base measuring 16cm x 26cm approx)
  • Beat the cream cheese, extra sugar and vanilla together
  • Then add the extra egg
  • Pour over the chocolate mixture swirling through with a knife for a marbled effect
  • Bake in a moderate oven for 40 minutes...maybe even up to an hour depending on how fast or slow your oven cooks
  • Cool in the tin and cut it when cold

ok I shall be nice and breakdown the nutritional stuff hmmm rounded up slightly it's 48 carbs for the lot...I cut it into 16 pieces easily so that would be 3 carbs per piece...depending on the sweetener you used...

it was a huge family favourite...really I only subbed the flour and sugar...its difficult to stuff up :) and looks pretty

um after checking some sweeteners online *major freak out* um I'd recommend a liquid one or one without carbs....I'm ditching the stuff I have at home as I just found out it had 56gms of carb per 100gms....*pulling hair out* might explain a few things
