ok I used to make this all the time but it wasn't diabetic-friendly so I decided today to try and fix that and it worked!!!!!!!!!!
Ingredients
Fudge
185g butter
1/4 cup cocoa
1 cup sugar substitute of choice
2 eggs
1 cup almond meal
Cheesecake
250g cream cheese
1/3 cup sugar substitute of choice
1 teaspoon vanilla
1 egg
Method
- Melt the butter with the cocoa ( I nuke it)
- Remove from the heat
- Add sugar and then whisk in the eggs
- Stir in the flour and beat the mixture until smooth
- Pour the mixture into a greased tin (base measuring 16cm x 26cm approx)
- Beat the cream cheese, extra sugar and vanilla together
- Then add the extra egg
- Pour over the chocolate mixture swirling through with a knife for a marbled effect
- Bake in a moderate oven for 40 minutes...maybe even up to an hour depending on how fast or slow your oven cooks
- Cool in the tin and cut it when cold
ok I shall be nice and breakdown the nutritional stuff hmmm rounded up slightly it's 48 carbs for the lot...I cut it into 16 pieces easily so that would be 3 carbs per piece...depending on the sweetener you used...
