MEATLOAF (Adjust the recipe to your liking.)
(4 servings: 3.7g Net Carbs per serving)

1/2 C onion, chopped
1/2 C green pepper, chopped
1 egg
1 tbsp prepared yellow mustard
1/2 tsp salt
1/8 tsp black pepper
1 tsp garlic powder
1 tsp oregano
1 lb lean ground beef
1/4 C tomato sauce

Preheat oven to 350. Place the onion & green pepper in a bowl. Stir in the egg, mustard & seasonings. Fold the ground beef in well. Pat into an 8" square baking pan. Spread the tomato sauce on top. Cover with foil, bake 45 min. Uncover, bake 15 min. more.

I strongly recommend using a meatloaf pan, you'll be shocked at even high split meats for leaned how much grease ends up on the bottom portion! It also make the meatloaf taste lighter..its a huge difference! I paid about 15.00 for mine at walmart :)
