It is getting cool enough to bake, right now ... I made this last night:
2 pkg frozen cauliflower, steam or boil till very soft, and mash with 1/4 c cream and 2T butter.
Sautee in olive oil: 1/2 onion, 1 carrot, 3 stalks celery, 4 cloves garlic
add: 1 can diced tomatoes, 1 tsp cinnamon, 1/2 tsp allspice.
Add 1 pkg ground fake crumbles, but you could use ground lamb, or beef (sauteed and drained), or even chopped mushrooms.
Spread that in an oiled casserole. Sprinkle with 4 oz shredded Italian cheese (more if you like, but I liked it with less).
Arrange 1 can of quartered artichoke hearts on top of the cheese, then spread the mashed cauli on top of that.
Bake at 350 until you can no longer stand the lovely smell of it baking, about 30 - 40 minutes.
My husband, son, and I all loved it.
