You can make the mushroom sauce by itself and you have cream of mushroom soup, or let it simmer a little longer to thicken more and you have mushroom gravy.
(To Newbies: ThickItUp is for thickening sauces and gravies. You can buy it online at Netrition.)


1 egg
1 tablespoon prepared yellow mustard
1 teaspoon garlic powder
1 teaspoon oregano
1/2 cup onion, chopped
1 pound lean ground beef

Mushroom Sauce:
1 clove garlic, minced
1 slice of onion, finely chopped
2 tablespoons butter
1 can mushrooms, undrained, chopped small
1 can chicken broth
1/4 cup heavy cream
1/8 teaspoon nutmeg
pepper to taste
1 teaspoon ThickItUp

Preheat oven to 350 degrees. Stir together the egg, mustard, garlic powder, oregano and onion. Fold in the ground beef with your hands, mixing well. Shape into meatballs and place in an 8" X 8" baking pan. Cover tightly with foil and bake 1 hour.

While meatballs are baking, saute the garlic and onion in the butter until softened, but not browned. Stir in the remaining ingredients, adding the ThickItUp last. Bring to a boil, stirring often. Lower heat and cook, stirring occasionally until the sauce is slightly thickened.

Drain the baked meatballs and add them to the sauce. Simmer 5 minutes more.
